Easter Bonnets On Parade

I know not everyone celebrates Easter but for those that do it usually involves lots of food, drinks, family and friends.

Since I started my program last June I have gone through every major holiday but Easter. I never had a problem with any of them because I had a plan and stuck to it.

This will be my first holiday in Transition so I’ll get to eat a few more things.

My plan will start with an Easter Breakfast at Church and I know they will have eggs a good protein source and I can also eat fruit now. I won’t have any of the baked breads.

For Easter this year we will be meeting up with family at a half way point and eating at an Olive Garden. This will be the first time I have been to an Olive Garden since I started MF 10 months ago. I was happy to see on the menu that they now have several items that will be on plan for me. I’ll decide before you leave, make my plan and stick to it. I’ll bring a bar in my purse so if others have dessert I can have a treat too.

Quick update..
I reached my goal Jan 25 th 2010 after 33 weeks on The Medifast Plan with a loss of 80 lbs.
 
So today I just finished week 8 of Medifast Transition. 
I lost one more pound this week so I’m now -7 under my goal total loss of -87 lbs.  I still have another 4 weeks to go on Transition because I lost between 50-100 lbs so 12 weeks total.
 
I’m finding it very easy to follow the program.  I now only choose dessert like Medifast meals as snacks three times daily.  The bars, brownies and chocolate pudding are my favorites. I still have not even thought of eating off plan. I know each day I get three yummy chocolate treats and that’s enough for me to stay on track. 
 
I do get hungry in between meals but I get to eat so much and so often it hasn’t been a problem for me.

Medifast Lean & Green Cauliflower Pizza Crust

 

Cauliflower Pizza Crust

This is one of my favorite Medifast Lean and Green dinners. There are so many recipes floating around out there and I have not had great success with mine so I did some research.  I read the Medifast forum and asked some of the experts. 

Yesterday I gathered up all my supplies and worked till I mastered both the recipe and the baking techniques 

Crust:
1/4 cup Egg Beaters (1/8 Lean)
3/8 cup low fat shredded Mozz or Mexican 4 cheese variety for a harder crust (3/8 lean)
1 cup Fresh Cauliflower chopped up in food processor (2 greens)
dash of Italian spices (optional)

Mix together and put into a sprayed foil pie pan.  Pat down so it all sticks together.

Bake 15-20 min at 450 till it starts to turn brown then flip it over and bake another 10 minutes.

Top with
2 tsp sugar free Pasta sauce ( 2 condiments)
1/2 cup low fat shredded Mozzarella cheese (1/2 lean)
1/2 cup of veggie (1 green)

Place it under the broiler just till the cheese melts

To Freeze Crusts
Let cool and stack in foil tins, wrap well and freeze.  When ready to use let defrost, top with toppings and bake in the foil tin. 

Wash and reuse tin over and over.

 

From one fresh head of cauliflower I got 5 crusts so I ate one for dinner and froze the other 9 for later.

Since I’m now in Transition I can add more on top like turkey pepperonni for my extra lean and more veggies for my extra veggies.

 The crusts are so good plain you don’t even need to top them with anything. You can also make them like logs and they will be like bread sticks that you can dip into the pasta sauce.

Today I’m 49 years young. 

Happy Birthday to me!

 

I’m having my cake and eating too!

 

So for Breakfast I had a strawberry

surrounded by chocolate and topped with whipped cream.

 

 
 
It was totally On Plan since I’m on Medifast’s Transition Plan. 
 
I reached my goal my Re-Birth-day was Jan 25th with -80 lbs lost. 
I went from 230 to 150 in 33 weeks. 
 
I just finished my 6th week of Transition so I do get fruit and dairy. 
I weighed in this morning and I down -2 so that makes me -6 under goal. 
I really don’t want to lose any more and I hope to put on the 6 I’m under goal or I’ll need to get smaller pants again. 
 
A year ago I never thought that would be a problem.
 
 
Medifast is the BEST Birthday Gift I ever gave myself.
 
What a difference a year makes
 
I feel great and I’m ready to take on the next half of my life.

Week 5

Just a quick update on how week 5 of Transition went. Since each week is now just a repeat of Stage 4 it’s very easy to follow. I guess I’m a creature of habit only now they are Healthy Habits.

I bought another glass 1 cup measuring cup with a handle and I use it as a bowl to eat my fruit and yogurt out of.  It’s easy to get just the right amount, easy to hold on to and less dishes to wash.

I added Ezekiel bread as a whole grain choice this week.  I eat it toasted or for dinner last night I pan fried it with olive oil and garlic salt.  Ezekiel is a sprouted 100% whole grain bread found in out health food refrig. section in the orange wrapper.

Mashed cauliflower tastes 100% better using fresh cauliflower and not frozen. Steam it till it’s soft and the best way to mash it smooth for me has been one of those hand held wand stick mixers.  I can do it right in the pot or serving bowl. I tried the magic bullet, hand masher, ricer and fork.

Weigh in today +1 lb. So I’m now -4 under goal.  I think it’s starting to level out.
