Fast and Easy Medifast Lean and Green Chicken Zucchini Alfredo

I finally cooked the perfect zucchini Alfredo and it took 5 minutes

I really don’t like zucchini well… until now that is. Oh my it was so good! It had a crunch to it.

Super easy and fast only 2 ingredients.  I used a julienne vegetable peeler and 2 small zucchini’s they looked like cucumbers. Peel the zucchini skin and all only till you hit the seeds then stop. I used plain water in a pan and saute the zucchini about 3-4 minutes till it looks like cooked spaghetti, do not over cook. Drain and put into a bowl add 2 laughing cow lite garlic cheese wedges and toss till it turns creamy.

1 green serving would be 1 1/2 cups and the 2 LC lite would be 1 fat serving. Add your lean serving of cooked chicken and it’s a full lean and green.

Mock Mashed Potatoes from Cauliflower

Ingredients

1 Head of Cauliflower

2 lite laughing cow cheese wedges

Steam cauliflower for 20 minutes and drain

Return to pot add the cheese and I like using a stick wand hand 
mixer right in the pot. Blend till smooth and creamy.  
It will look just like mashed potaotes.

From one head of cauliflower I got 2 cups so I ate one
and saved one for next time.
1 cup = 2 green servings the cauliflower
and 1/2 healthy fat laughing cow cheese
Remember you need 3 servings of Green per day
This would be 2 so you need one more serving of green

Medifast Lean & Green Cauliflower Pizza Crust

Cauliflower Pizza Crust

This is one of my favorite Medifast Lean and Green dinners. There are so many recipes floating around out there and I have not had great success with mine so I did some research.  I read the Medifast forum and asked some of the experts.

Yesterday I gathered up all my supplies and worked till I mastered both the recipe and the baking techniques

Crust:
1/4 cup Egg Beaters (1/8 Lean)
3/8 cup low fat shredded Mozz or Mexican 4 cheese variety for a harder crust (3/8 lean)
1 cup Fresh Cauliflower chopped up in food processor (2 greens)
dash of Italian spices (optional)

Mix together and put into a sprayed foil pie pan.  Pat down so it all sticks together.

Bake 15-20 min at 450 till it starts to turn brown then flip it over and bake another 10 minutes.

Top with
2 tsp sugar free Pasta sauce ( 2 condiments)
1/2 cup low fat shredded Mozzarella cheese (1/2 lean)
1/2 cup of veggie (1 green)

Place it under the broiler just till the cheese melts

To Freeze Crusts
Let cool and stack in foil tins, wrap well and freeze.  When ready to use let defrost, top with toppings and bake in the foil tin.

Wash and reuse tin over and over.

From one fresh head of cauliflower I got 5 crusts so I ate one for dinner and froze the other 9 for later.

Since I’m now in Transition I can add more on top like turkey pepperonni for my extra lean and more veggies for my extra veggies.

 The crusts are so good plain you don’t even need to top them with anything. You can also make them like logs and they will be like bread sticks that you can dip into the pasta sauce.

Medifast Iced Latte Recipe Or Gas Station Cappuccino

My old habit before Medifast for a Sunday afternoon was to pick up the Sunday paper on the way home from church along with a 20 oz cappuccino from the gas station.  I would come home, put my feet up and read the paper and drink my cappuccino.

 Well, some things have changed a little.  I still get the paper after church but now I drink my own special Medifast coffee drink.  Yes, Medifast does have a cappuccino mix, I wrote about it in a past blog post Here.

But, now I have started to experiment with some new recipes using my Medifast meals.  Today I chose the Vanilla shake mix and made it as usual but I added a teaspoon of instant coffee and ice.  I blended it in my Magic Bullet for the perfect iced Latte.
What makes it even better is that 20 oz gas station cappuccino has French Vanilla Cappuccino, 20 oz (360 calories/13 g fat/2 g fiber/57 g carbs)
Compare that to my Medifast version Calories: 90 Total Fat: 0-1 grams Saturated Fat: 0 grams Cholesterol: 0 mg Sodium: 250 mg Potassium: 420-440 mg  Total Carbs: 13-14 grams Dietary Fiber: 3 grams Sugars: 8-9 grams Protein: 11 grams Vitamins & Minerals: 6-60% daily value plus caffeine from the regular coffee.  You could also use decaf if you don’t want the caffeine.
Plus my Medifast version will keep me full for 2-3 hours.
 
You could also do the same thing using one of the Medifast chocolate shake mixes.

Medifast Lean And Green Turkey Taco Salad

Tonight I thought I would try something NEW for dinner.

I never tried ground turkey before but it’s on the lean protein list of the Medifast 5&1 Plan so I thought why not.  I do love turkey.  I went to the Support In Motion site and found out I could add my own private foods so I went to add food then private food and added the two other products I used, Kraft Fat Free Catalina dressing and finely shredded taco cheese.  You add all the nutritional info too. After adding them you can choose them just like the other foods and it keeps track of what you ate.
Ok so here it goes

Natalie’s Gobble, Gobble Taco Salad

5 oz ground turkey browned and seasoned with taco seasoning
3 cups of lettuce
1/8 cup of shredded taco cheese
2 TBS Kraft Fat Free Catalina Dressing
Put lettuce on the plate, sprinkle on cheese, top with cooled turkey, place dressing on top. Cut up and toss around to spread out dressing.

Medifast Weight Loss Cappuccino With NO Caffeine

Medifast has something I think you will enjoy. 

Medifast offers a Cappuccino as a meal option. 

Great for that quick breakfast on the go.

It’s kosher dairy, vegetarian product, caffeine-free, soy-free, contains whey, and has low-lactose so it will agree with a lot of people.  All except those needing their morning caffeine like me.  If I miss my caffeine first thing in the morning I get a headache and drag the rest of the day.

My solution is when I do have the Medifast Cappuccino I add a teaspoon of instant coffee to my cup.  I get a creamy cappuccino with a jolt of caffeine and it counts as a meal and I’m full for 2-3 hours. You could also add fresh brewed coffee to the mix instead of the water.

Another option is too add ice and blend it into a cold and refreshing iced coffee drink.  You can also add  sugar-free flavored syrups for a variety of different flavors.  At only 100 calories for a meal it makes a great choice.

Medifast Weight Loss Quick Tip Of The Day

Medifast offers 6 soups, Beef Vegetable Stew and Chili. My favorite right now is Cream Of Broccoli.  When I started my plan it was June and rather hot.  The thought of hot soup was not something I want to eat.  What I started to do was not eat it till it was cool.  The cool soup still tasted great and it added to my meal variety all summer long. I’m sure in our cold Wisconsin winters I will welcome some hot soup.

         When making the soup I follow these simple steps;

  • Heat the water only

  • Add soup mix to hot water and stir well

  • Cover bowl and let sit  5-10 minutes (longer for the chicken noodle, wild rice,  stew and chili)

  • Enjoy

This method will NOT cause a boil over in the microwave.  I like to make my soup in a large coffee mug and drink it.  It’s less messy that way, which is great if you eat at your desk.
